Curry-Cajun Spiced Chicken

This comes from a friend on Lake James, Indiana.  Simply mix ingredients together, pour over chicken, bake for a quick dinner!

1/3 cup of honey
3 Tbsp water
3 Tbsp prepared mustard
2-3 tsp cajun seasoning
2-3 tsp curry powder
2 Tbsp melted butter or margarine
1 tsp lemon juice
1 clove garlic minced
6 skinless boneless chicken breasts (1 1/2 pounds)
Hot cooked rice (for six)

Combine all ingredients (except chicken and rice) in 9x12 baking dish - mix well.  Add chicken breasts.  Turn to coat.  Arrange in single layer.
Bake uncovered in 350 degree oven about 30 min. or til chicken is tender and no longer pink.  Serve over cooked rice.  Makes 6 servings.

Zucchini Coconut Loaf

Special from the Berkey Bee Kitchen:  This loaf is good, spicy and lovely to serve your guests.  It cuts better the second day.  Prep time about 15 minutes.  Cook time about 1 hour.  Ready in about 1 1/2 hrs.  Makes 12 servings:  one 9x5x3 inch loaf.

Ingredients:
1 egg
1/2 cup vegetable oil
1/2 cup honey
1/2 cup sugar
1 cup grated zucchini
1/2 tsp. vanilla extract
1 1/2 cups all - purpose flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 cup flaked coconut
1/2 cup chopped walnuts
1/2 cup raisins (or currants)

Directions: 
  1. Preheat oven to 350 degrees F (175 degrees C).  Grease one 9x5x3 inch loaf pan
  2. In small pan boil one cup of water.  Add raisins (or currants) and boil for two minutes.  Drain.
  3. In mixing bowl beat egg, oil, sugar and honey.  Stir in zucchini and vanilla.
  4. In another bowl, measure flour, baking powder, soda, salt, cinnamon, nutmeg, coconut, walnuts, and raisins.  Stir to combine thoroughly.  Pour all at once over batter in mixing bowl.  Stir to moisten.  Turn into greased 9x5x3 inch loaf pan.
  5. Bake at 350 degrees F for 50 - 52 minutes until an inserted toothpick comes out clean.  Cool in pan for 10 minutes, then turn out on rack.  Cool and wrap.

Honeyed Sweet Potatoes

Sweet potatoes are a healthy vegetable choice good all year round and not just at Thanksgiving!  This recipe serves 4.  Prep time about 10 minutes, cook time about 30 minutes, ready in under an hour.

Ingredients:
1/3 cup honey
1/4 cup melted margarine or butter
4 peeled sweet potatoes sliced into 1/4 - 1/2 inch thick slices

Directions:
  1. Preheat oven to 350 degrees (175 degrees C).  Grease a 13x9 inch baking dish with margarine
  2. Stir together the honey, margarine9butter), and salt.
  3. Add potatoes and transfer to baking dish.
  4. Pour remaining liquid from bowl over potatoes.
  5. Cover and bake for 30 minutes, basting frequently (2 or 3 times).

Wild Rice Salad

This recipe is a real winner.  From Taste of Home, as modified by Nana.  This will make enough for 8 servings.  Also it is gluten free!  Prep time 10 minutes. Cook time 45 minutes.  Ready in 3 hours or overnight.

Dressing:
1/4 cup olive oil
1/3 cup orange juice
2 Tbsps honey

Salad:
1/2 cup uncooked wild rice
2 golden delicious apples, chopped
juice of one lemon
one cup golden raisins
one cup seedless red grapes, halved
2 Tbsps each of minced fresh mint, parsley, and chives
Salt and pepper to taste
One cup pecan halves

Directions:
  1. Combine dressing ingredients and set aside.
  2. Cook rice according to pkg. directions; drain if needed and allow to cool.
  3. In a large bowl, toss the apples with lemon juice. 
  4. Add raisins, grapes, mint, parsley, chives and rice
  5. Add dressing and toss.
  6. Season with salt and pepper
  7. Cover and chill salad several hours or overnight.
  8. Add pecans just before serving and toss lightly.
